Carrot Bread

Okay, joke aside. Studies have shown that there are many health benefits of eating carrots. As carrot is rich in carotene, it reduces the chance of having cancer, heart disease and arthritis. And because it is also high in fiber, it is an excellent way to combat constipation (especially great on dogs who are fed mainly on kibbles). These are just two of the dozen more health benefits of eating carrots.

Y’know, I’m such a carrot fanatic that I use them practically in all dishes (and juices) for my dogs – from carrot soup, puree to cake. But for today, we’re going to do just carrot bread.

Let the fun begins.

Serving: 1 loaf of Carrot Bread

Ingredients:

  • 2 eggs
  • 2 teaspoons ground cinnamon
  • 1 teaspoon vanilla
  • 1 cup sour cream
  • 1 stick of butter room temperature
  • ∕з cup of sugar
  • ½ teaspoon salt
  • 2 cups all purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 cup of finely grated carrots
  • 1 cup pecan pieces
  • 1 cup coconut milk

Methods:

  1. Preheat oven to 350°
  2. Combine butter, salts, sugar and eggs in a large mixing bowl, stir to blend
  3. Then add sour cream, vanilla, cinnamon, stir to blend
  4. Mix in flour, add cup of finely grated carrots, coconut milk, and nuts
  5. Bake it in a loaf pan for 80 minutes or until done. Use wooden skewers to test for doneness.

Special note:

Some dogs are sensitive to coconut milk, so you may want to substitute it with low fat milk or similar. While it’s a common practice to use whole wheat flour for baking, I use all purpose flour for those dogs that are allergic to wheat. I also reduce the amount of sugar as carrot has already sweet favor to it. If you and your dog have sweet tooth, go ahead and add it up to one cup but no more. Last but not least, this carrot bread is not meant for dogs with diabetes.
